Experiment 3: Eggless Blackforest Gâteau!

Author: Anjulika // Category: , , , , ,
Yesterday, G, H and I set out on our 4th experiment. Eggless Blackforest Gâteau! We started off by researching all our favourite eggless baking blogs for a recipe... Though we found quite a few, we decided to go with our perfectly moist chocolate sponge cake recipe from our previous post. It really is an excellent recipe! You can't go wrong with it...:) We baked the cake using double the quantity of ingredients. Once done, we left the cake to cool and we set out to make the frosting. For the first time we used Rich's non dairy frosting. And boy, was it good?!!! It's rich, creamy and fluffy, all at once. We whipped it up and mixed it with half a tin of chopped, pitted cherries. We infused the cherry syrup with a shot of sum and moistened the cake with it. Then we frosted it with the lovely cherry icing, used a few whole cherries to decorate and voilà!! We chilled the cake for 30 minutes and it was ready to devour. I'm sure we've all gained a few pounds....

Experiment 2: Our Perfect Moist Eggless Chocolate Cake!

Hey! We'd like to share our perfect eggless chocolate cake recipe! I don't remember where I found it.... But it's a really good recipe that yields a super-moist cake with a awesome crumb texture! The picture is of a cake that I made to celebrate Sachin Tendulkar's birthday during the IPL Final..;)
Here's the recipe:

Moist Eggless Chocolate Cake Recipe

* All Purpose Flour 1 cup
* Baking Powder 1/2 teaspoon
* Baking Soda 1 teaspoon
* Unsweetened Cocoa Powder 6 tablespoons
* Granulated Sugar 3/4 cup
* vegetable oil 1/2 cup
* Hot Coffee 1/4 cup (1 tsp of coffee in 1/4cup hot water)
* Milk 1/4 cup
* Yogurt (I used plain non fat, measured it with dry measuring cup) 1/4 cup
* Vanilla Extract 1 teaspoon
Yield: One 8-inch or 9-inch cake.

Procedure:1. Preheat the oven to 170 C. Lightly grease an 8-inch round cake pan and dust it with cocoa powder.
2. In a large bowl sift together the all purpose flour, baking soda, baking powder, cocoa powder and sugar. Make a well.
3. Add all the wet ingredients one by one.
4. With an electric mixer, beat the mixture on low speed for 2-3 minutes until the dry and wet ingredients are well combined. Do not over beat it (I didn’t use electric mixer but only baking spatula to mix the ingredients).
5. Pour the batter in the prepared pan. Tap the pan a couple of times so the batter is spread evenly and there are no air bubbles.
6. Bake for about 30 min. Check the cake with tooth pick. Toothpick inserted in the middle of the cake should come clean when the cake is ready.
7. Once out of the oven, transfer the pan to a wiring rack to cool. After about an hour remove the cake from the pan and let the cake cool completely before frosting.

Frosting Recipe:* Margarine/butter at room temperature 3 tablespoons
* Powdered sugar 1 1/2 cups
* Unsweetened cocoa powder 1/4 cup
* Milk, fat free 3-4 tablespoons
Yield: About 3/4th cup of frosting, enough for one 8-inch or 9-inch cake.

Procedure:
1. In a medium size bowl add the margarine, powdered sugar and cocoa powder. Start beating with an electric mixer on low speed. At this stage it may seem to be very dry. Don’t panic. Wait until you add the milk.
2. Add milk little by little and continue beating the mixture till you get a nice spreadable consistency.
3. Now transfer the cake to a plate and start frosting it.
4. Cool down in fridge for at least one hour (the texture of the frosting will look better after at least one hour in fridge).

Experiment 1: Masala Bread

We love bread! We can eat it with anything...:) A few days ago we were looking for a bread recipe to experiment with. We wanted to try our hand at a bread that was eggless and easy to make as well as something that had an Indian flavour! That's when we came across this recipe at Pratibha's blog. We followed the recipe to a "t" except that we didn't have any dill leaves to put in it. But it still came out delicious! Much to our delight, the bread was soft and spongy and had an amazing texture! We enjoyed it warm out of the oven, with a dollop of butter. Mmmmm.....

HELLO! I'm Anjulika. I've just created this page, where I intend to share all the information on baking experiments by me and my sister Gitanjali! We shall also put up links to other foodie blogs that inspire us to bake. Our baking is mostly eggless and easy to do at home, using simple ingredients.
